Choco Nut Skinny Muesli Balls

Ingredients
1 cup of raw almonds
1 tbs of coconut oil
1/4 tsp low-sodium salt
2 tbs coconut flour
1 egg white
2 tbs plus 1 tsp of cacao powder
liquid stevia to taste
Instructions
- Preheat oven to 350˚F (180˚C)
- First grind the almonds in a food processor or blender until you have a flour.
- Add the ground almonds, salt, coconut flour, egg white, pure liquid stevia and cacao power to a bowl and mix with a spoon until you have a dough.
- Then either:
- a) Place the dough onto a piece of parchment paper. Place a second piece of parchment paper over the top and roll it until it is 1/4” thick. With a wet knife, score it into 1” squares. Place the parchment paper on a baking sheet when finished.
Or: - b) Take a small pinch of the dough and roll into a 1/4” thick round ball and set on a baking sheet lined with parchment paper.

- Bake for 15-18 minutes for cereal balls or bake for 8-2 minutes for flat cereal.
- Remove from the oven and let cool on the sheet.
- Top with your favorite nut or seed milk and enjoy!
